Pesto Noodles Recipe

These noodles require less than 5 minutes to prepare yet are delicious and filling as either a main or side dish. You will need one of the inexpensive spiral-cutting devices on the market, such as a Veggetti, that make creating noodles out of vegetables a snap with a few turns of the wrist.

MAKES 2 SERVINGS

   2 medium to large zucchini, spiral-cut
   ½ cup basil pesto
   2 tablespoons pine nuts
   4 ounces shaved Parmesan cheese (optional)

In a large bowl, mix together the zucchini, pesto, and pine nuts. Top with the cheese, if using, and serve.
