After a period of time with seemingly no impact, I am starting to notice glucose spikes after drinking whole milk and some cheeses (hard and otherwise). My intake of both has definitely increased versus the period where no impact was observed.

Depending on volume of milk consumed, I’ll spike from pre-prandial of ~87 to 110+, sometimes even as high as 120. And it seems to take a few hours to get back under 100. Cheese shows spikes as well, but less extreme. 

Organic, whole fat, grass fed expensive stuff.

Has anyone experienced similar? I’m not sure of what to make of it but it’s bumming me out. I love me some cheese and a good cortado...

Milk can raise blood sugar and provoke insulin too.

Try backing off on the milk for a period of time and see if things get better.
