My friend told me about this idea and so I tried them.  They do have a lot less carbs than potatoes, but still have carbs.    When cooked, a cup has anywhere from 15 to 17 carbs with about 3 or so fiber, so figure one cup has about 12 to 13 or 14 carbs when cooked. 

Raw is good too.  Sliced....not many carbs....only about 7 per cup.  They have a little spicy bite to them.  This part is really funny.........my husband of 37 years looks at this huge rutabaga and says to me, "I love rutabaga";  I NEVER KNEW THAT......37 years and he never said that before!  Ha!    Gee, and I thought we communicated well!

We thought these "fries" were delicious....only problem is not eating too many.

Peel and Cut up a rutabaga into the size "fries" you like, either really small strips or fatter strips.   Put them into a big bowl and drizzle a little oil over them and toss.........then sprinkle with desired seasonings......garlic powder, onion powder, little Spanish paprika, black pepper, red pepper, sea salt........whatever you like.....you can taste them raw....see what you like.

Place them on a cookie sheet.....I put parchment paper on my cookie sheet with edges so any oil won't drip off.   I put in oven at 350 and baked until done.......to my liking....I like them more firm and probably not completely cooked, my husband likes them more cooked.   Probably takes about 25 to 30 minutes, maybe more until done.  

I served them with a turkey cheese-burger.  Yum

Mmmmmm...I love rutabegas, these sound awesome!  I can't wait to try them. Instead of savorey seasonings, I wonder how some pumpkin pie spice and stevia would be?
