Hi, I took my blood glucose readings in 30-minute intervals from the time I started eating my meal to learn when my blood sugar peaks and when it goes below 100. Here are my results.

1:45 pm (right before I started eating)  82 mg/dl
2:15 pm 75 mg/dl
2:45 pm 91 mg/dl
3:15 pm 102 mg/dl
3:45 pm 113 mg/dl (peak at the 2 hour postprendial mark)
4:15 pm 106 mg/dl
4:45 pm 106 mg/dl
5:15 pm 103 mg/dl
5:45 pm 93 mg/dl (fell below 100 at 4 hour postprendial mark)
6:15 pm 86 mg/dl

This is what I ate for the meal.
25 g ancestral ground beef grass fed
100 g beef suet
50 g beef tallow
129 g beef broth
9 g cannellini beans for GOS
10 g inulin (in beef broth)
70 g green plantain for FOS (zero net carbs)
60 g Reuteri yogurt
1 raw egg yolk

Macro Totals 
Protein 13 g
Carbs 5 g
Fat 160 g

I usually eat one meal a day. This meal is the only thing I have eaten in the last 24 hours. I walk briskly an hour after each meal to lower the glucose. It seems to me that my insulin response is very sluggish. Is this something I should be concerned about? Frankly, I am quite unhappy with these numbers. I would appreciate anyone elses thoughts on this. Thank you so much for your help!
