I have used My Crispatus to ferment tomato paste, apple cider,black cherry juice,apple sauce…Use same time and temperature as yogurt fermentation.Taste periodically to assess sugar content. It generally takes longer than 36 hours.

Thank you for the response, If I use a compliant fruit juice and heat it to body temp, would I need to use an air lock, also should I add inulin.

I just use a loose lid during fermentation, no air lock, leave room at top of jar for expansion.Tomato paste and applesauce will create air pockets and rise up.I have been successful without inulin and with it.
