Does anyone have experience fermenting hummus? I read the Super Gut book then followed the instructions in the book to make my own. It smelled sour. It tasted sour then cheesy. Is this normal? I mixed it with pasta sauce and it was much more appetizing. This is how I made it:

- Blended canned chickpeas and sesame seeds
- Mixed in the L. reuteri Gastrus blend by BioGaia
- Fermented in a mason jar which was inside a pot of water with a sous vide heating the water to 100 degrees Fahrenheit for 48 hours

Any sense of what the carbs on on this?  Hummus came up as a possible substrate several days ago, but is seems so carby.
