The Teton sausage is fine--I’ve eaten it many times with no ill effect. 

My only concern about the chicken sausage (which I’ve never tried) is the calcium alginate casing. I have no idea what effect that might have on your system.

The problem with sausages are the additives like Calcium alginate. Alginate is a dietary emulsifier which can cause gut inflammation and has been implicated in IBS. The dietary emulsifiers act like a glue and can kill beneficial gut microbes.

If you’re concerned about the calcium alginate casing, you can simply just cut it off
