If it’s from a pastured animal fed no grains, the fat profile should provide excellent nutrition, including omega 3. It could be used for sauteing because it will tolerate higher heat. I haven’t thought of this before and am going to try it.

Thanks for the replies and recipe. From these, I gather chicken carcass (free range) is better choice than bovine bones, unless they come with soft tissue or bone marrow.
