I love my Dad’s walnut fudge - but it’s made with Eagle Brand Sweetened Condensed Milk.  Sigh.  Someone gave me some hand shelled pecans for Christmas so I really wanted to use them to make fudge.  Went searching for ways to make sugar-free condensed milk.  Came up with this:
2 c cream
2 T unsalted butter
1/3 c sweetener

Hmmm.  I knew erythritol would crystalize and doesn’t caramelize, so that’s wouldn’t work.  Turns out Allulose (the liquid kind) WILL caramelize and DOESN’T crystalize.  It’s 70% as sweet as sugar, so that meant .4285 c of allulose.  Round up to 1/2 c, or if you want to be more accurate, measure 1/2 c and take out 1 Tablespoon.

So I mixed it all up and simmered for 20 min.  Remember to stir continuously to keep it from scorching!  YUMMMMMY.  Tasted almost like caramel.  Reduced to about 14 oz.  after cooking.

Then, following the recipe for fudge on the Eagle Brand can, I added 18 oz DARK chocolate.  I used Ghiradelli brand 70% dark chocolate baking squares, to minimize sugar.  And a dash of salt.  And LOTS of pecans.

Let the condensed milk cool down a bit before adding or you’ll melt the cocoa butter and it will get oily.  If it does, no worries - just cool it for a bit in the fridge until the oil solidifies and mix it back it.

Spread into a waxed paper lined 9x9 pan and cool in fridge.  Cut into squares.

Linda, what a wonderful idea you had! This could satisfy a desire to be a bit naughty and not have to pay the piper later.

One question - how do I measure 0.4285 cup of liquid Allulose? Thank you, ma’am :-)

LOL - hubby felt so energized after the fudge, when he went for his normal walk of 2 laps around the park, he did 3 laps without realizing it.
