2 cups cauliflower rice, lightly cooked
1 cup grated cheddar cheese (4oz)
½ cup butter, melted
3 Tbsp minced onion
½ cup packed chopped parsley - this needs to be fresh!
¾ tsp salt
3 slightly been egg yolks
3 stiffly beaten egg whites

Beat the egg whites till stiff peaks form.

Meanwhile, mix everything else.

Beat about a third of the egg whites into the cauliflower mixture to lighten it some.  Fold the lightened mixture into the remaining egg whites.

Pour into a greased deep casserole  - I use a pyrex dish that says it holds 2 quarts and there is extra room.  You could use a couple of bread pans.

Bake at a 350 degrees for 25 minutes, or until set.  It will puff up while cooking and collapse when it comes out of the oven.  That’s why it’s a pudding and not a souffle!  It reheats great, too.  I like to slice off a bit after it’s cold and reheat by browning in some butter.

This could also be varied with different seasonings.  You could add in Mexican flavors or Italian flavors.  It’s very versatile.
