I have this delicious recipe from Dr. Oz actually.
It gives me a lot of energy, so I’ll share it with you:
2 thume sprigs, plus leaves for garnish
3 oz boneless, skinless chicken breast
3 carrots, peeled an thinly sliced (about 1 cup)
2 tsp lime juice
1/2 tsp grated ginger
Bring 1 cup (i do more) water and thyme sprigs to boil. Add chicken and cover till cooked through. Remove the chicken en keep warm
Puree carrots with cooking liquid, lime juice, ginger and salt and pepper in a blender until smooth.
Put this on the stove and add the liquid from the chicken until you like the thickness.
Shred the chicken.
Ladle soup into a bow and top with the shredded chicken.
Garnish with Thume leaves and seaon with more pepper.
