I am going dairy free in February so I tried a batch of it with coconut milk and failed. It came out like liquid and never set up. Here was my method using IP Ultra: 1 quart of Native Forest unsweetened coconut milk preheated to 180 degrees then cooled to 100 degrees. I then crushed 10 BioGaia Gastrus tablets and mixed with 2 TBSP of the cooled coconut milk, 2 TBSP of NOW Inulin and 1 TBSP C&H organic raw cane sugar. I then placed this mixture in with the rest of the coconut milk and set the IP for 104 degrees for 36 hours. I believe Dr. Davis mentioned somewhere that you need to go 48 hours for coconut milk? I also read somewhere to add gelatin for coconut milk recipe? Thoughts or suggestions? Thanks in advance!
