Quick Beef Stroganoff Hamburger Dinner in a Skillet

Adapted from an Emeril Lagasse recipe
makes 3-4 servings


1 lb. ground beef
1/2 t. salt
1/4 t. freshly ground black pepper
3/4 t. Emeril's Essence, plus more for finishing (can purchase at the store or make your own, recipe below)
1 T. olive oil
1/3 c. chopped yellow onion
1 c. sliced button mushrooms
2 t. chopped garlic
1/4 c. beef broth (I use broth made with "Better Than Bouillon")
1/2 c. sour cream
Grated white cheddar, optional
Chopped parsley for garnish, optional
1-  8 oz. bag Nooodle (non-soy shirataki noodles), or other non-soy shirataki noodles


Season the beef with salt, pepper, and Emeril's Essence. Heat the olive oil in a large skillet over medium heat. Add the beef and cook, stirring, until completely browned.

While the beef is cooking, heat a kettle of water to boiling. Place shirataki noodles in a colander and pour boiling water over. Be generous with the water, the noodles should be rinsed well. Drain and dump into a nonstick skillet on high heat. Snip clump of noodles into shorter pieces with kitchen scissors (easier to do when in pan). Fry, stirring constantly, until shirataki are slightly dry. Don't overcook or they will be hard and chewy. Set shirataki aside, off heat.

When beef is browned add onions and cook until soft, 3-4 minutes. Add mushrooms and garlic and cook until mushrooms release liquid, about 2 minutes. If an excessive amount of liquid is released cook a little longer, until evaporated. Add the shirataki noodle, beef broth, and sour cream. Cook, stirring, until slightly thickened, 5 to 6 minutes. Don't let it boil.

Remove pan from the heat. Serve immediately, topped with optional grated cheddar and parsley if desired. Pass additional Emeril's Essence at the table.

Keeps well, can add more sour cream when reheating. Recipe can be doubled.

Emeril's Essence (recipe by Emeril Lagasse)

2 1/2 T. paprika
2 T. salt
2 T. garlic powder
1 T. black pepper
1 T. onion powder
1 T. cayenne pepper
1 T. dried oregano
1 T. dried thyme

Combine ingredients thoroughly.
