I made the bars tonight. Delicious flavor. But where Dr. D said "consistency of thick dough," I had crumbs that were not sticking together very well despite the addition of 1/4 cup water. I think I measured accurately, since with my years of baking I'm pretty good at that. I had a bit of an adventure with the coconut milk, since I didn't know there'd be a hard layer on top and then slush and then liquid on the bottom. After cleaning some of it up off the floor :) I think I got a 1/4 cup of the right consistency. I used chopped pecans instead of pumpkin seeds, and I didn't chop them fine enough, but I don't think that was egregious enough to account for all the trouble holding these together.

I saw on the Wheat Belly comments that there was one guy who had crumbly texture, and Dr. D said how his always stuck together just fine. Sigh.

Any ideas? There's a chance these could really work for my family reunion, and I want to figure it out.

Ha ha FCT!

Fresh grated coconut would not be dessicated, but it would likely mold under storage.. due to high moisture content.
