I know a lot of folks don't eat pineapple, but this might be worth the indulgence.  I don't have an ice cream maker so I just froze it and that's okay if you let it thaw a bit.  But it's probably awesome with an ice cream maker.  Very creamy and the coconut and pineapple make an interesting texture.

2 egg whites (I used pasteurized ones since they aren't cooked)
1/3 cup sweetener (I used powdered xylitol so it wouldn't crystalize as much)
1-13.5 oz can coconut milk
3/4 cup crushed pineapple (no sugar added)
1/3 cup shredded coconut (unsweetened)

Beat egg whites and sugar until thick and sugar is dissolved

Add coconut milk, crushed pineapple and flakes coconut.  Mix well.

Fit the blade into the freezer cylinder and pour mixture in.  Follow instructions for your machine.
