PUMPKIN BREAKFAST PUDDING

 

I actually came up with this by accident (my shake got too THICK)  and am now hooked on it for breakfast... it is quick, lowcarb and tastes great.  You can prepare it right in your serving bowl (as show above) with an immersion (stick) blender or throw all the ingredients in the standard blender.

Ingredients:

    1/2 cup pumpkin puree (can use canned unsweetened concentrate)
    1/2 of an avocado (helps to thicken)
    2 Tbsp MCT oil (can sub melted virgin coconut oil)
    1/2 cup GFS pasteurized egg whites (or comparable amount of whole raw eggs if your genotype allows)
    1 scoop whey protein isolate
    1/8th tsp salt
    1/4 tsp pumpkin pie spice
    1 dropper full of Sweetleaf brand vanilla flavored liquid stevia (or sweetener of your choice to taste...such as erythritol/xylitol)   
     a few drops of vanilla or maple extract (optional)


Place all ingredients in a a bowl (or blender) and blend until thick.  Top with additional pumpkin pie spice before serving.  I often add in a tbsp of flax & chia....or a few nuts for some crunch.

Those sound awesome, I just made your pumpkin shake for husband and he likes it. I can only do this when my BG is about 4, its such a nice change from protein. I ordered some chia seeds from Usa today too.

HH - How much each of egg protein powder and water?  I use egg protein by default, although I have whey around for the rest of the family.
