Milk Chocolate Pudding

1 1/2 T cocoa
4 pkts Truvia sweetener (erythritol/stevia)
1/2 packet or 1 1/4 t. unflavored gelatin
pinch of salt
1/2 c. water, boiling
1/4 t. vanilla
3/4 c. heavy cream

Combine dry ingredients in a bowl. Heat water to boiling and pour over. Mix well for at least 3 minutes to dissolve everything.

Add vanilla and cream to other ingredients and mix well. Pour into individual cups if desired. Refrigerate until set.

Makes 2-3 servings. Recipe can be multiplied to make a big batch at once.

Two servings = 3.5 g net carbohydrate and 4 g protein per serving.

Are there any advantages to this over Jell-O brand no fat no sugar puddings?

Just want to verify, the gelatin is 1 1/4 teaspoons, not tablespoons?  I think I will make this tomorrow.  Thanks!
