Chocolate Hazelnut Cake

1 1/2 c. hazelnut meal/flour (or grind raw unsalted hazelnuts in blender or food processor, about 8 oz of whole nuts = 1 1/2 c of meal)
3 T gluten free oat flour (or grind your own using rolled oats)
1 1/2 t. Thick It Up or xanthan gum
5 T cocoa powder
1/2 c. whey protein powder, plain or vanilla (I use Jay Robb brand sweetened with stevia)
1/4 t. salt
1 1/2 t. baking powder
2/3 c. powdered erythritol
1/3 t. stevia extract (NuStevia Pure white stevia extract) or other low carb sweetener to taste. Other sweeteners will require a larger amount, stevia extract is very concentrated.
2 eggs
1/2 c. oil (I use avocado oil)
1 t. vanilla (can reduce or eliminate if using vanilla protein powder)
1 c. water

Preheat oven to 350 degrees F.

Combine all dry ingredients except erythritol and stevia extract. Sift erythritol and stevia extract into other ingredients, mixing with a whisk. Add eggs, oil, vanilla, and water. Mix well. Pour into a large bundt pan and bake for 35-40 minutes or until a toothpick or cake tester inserted into the cake comes out clean. 

Serve the same day or cut into pieces and freeze. To eat for breakfast put a piece into the fridge at bedtime, so it's thawed by morning. Microwave briefly to warm. I like it with heavy cream poured over. 

Total recipe = 32 g net carbohydrate, 81 g protein. I usually cut into 8 pieces for 4 g net carb, 10 g protein per piece.
