I’m 1/3 through Dr. Bernstein’s diabetes book and he’s pretty critical of vitamin C doses above 250 mg per day. I have a great deal of respect for his position on diabetes and diet, but this recommendation on vitamin C surprises me. Any opinions out there? Is vitamin C >250 mg per day sub-optimal for borderline, non-insulin dependent Type 2 diabetics (or those who very much want to avoid becoming a type 2 diabetic)? Do the benefits of higher doses (3 to 5 grams of C per day, for example) in combating CAD outweigh the concerns about maintaining an optimal glucose level in the body?
I think Dr Bernsteins gripe with C is that high doses give 'falsely low' BG readings They can actually be high, but taking C lowers them and the A1c ends up being much higher than what the BG readings were showing.
